... is what you often here when walking along Hanoi streets, near a lamp post, under the shade of a tree, or next to a door where there is a low table with glass pots containing different kinds of candies, roasted ground nuts, and sugar coated cakes. This is a complete description of a make-shift tea shop, which is a very popular part of Vietnamese street life.

 

 

The owner skillfully lifts the cap of the tea cozy, takes out the tea pot, and then pours the hot tea into a small cup. The owner then hands the cup of steaming tea to the customer. Unlike northerners, who prefer hot steamy tea, people in the south would like to add ice cubes to their tea cups/glasses due to weather difference.

 

Tea drinking - an indispensable habit.

Vietnamese people have a nice habit of drinking tea. They drink it everywhere and at any time: at home, at workplaces, even in tea shops on their way to work, or at formal meetings, weddings or funerals. They also place it on altars as an offering to their ancestors on worshipping occasions. Whenever the locals feel thirsty, they are likely to look for this drink, in both summer and winter. A cup of iced tea in a hot day in summer not only refreshes your mind but also detoxicate your body. On the contrary, in winter, a sip of hot tea makes you feel warm inside and better able to cope with the outside cold temperatures.

Yet, tea drinking is not a recent trend in Viet Nam but attached to an ancient history as follows;

Tea drinking - from history to daily life...

Viet Nam is one of the largest and oldest tea-producing countries in the world. The Vietnamese have been growing tea for over 2,000 years. As early as in the 11th century, tea was used as a symbol to convey the essence of Buddhism. During the period of the Tran Dynasty from the 13th to early 15th century, tea assumed a philosophical value for the Vietnamese. In the 15th century, the Vietnamese polymath Nguyen Trai (1380-1442) lived as a hermit, renouncing the outside world for a life of "tea, poetry and the moon".

While tea has a special philosophical value for scholars and a long tradition in Vietnamese history, it has its own place today in the life of ordinary people living both in the cities and in the countryside. In the past, peasants could not afford expensive tea, so they grew tea on their own. Nowadays, tea is used to bind people together, for example, the peasant often invites his neighbor around for a chat over a cup of tea. They drink tea initially to thank the host for his hospitality, then throughout several tea sips, they open  heart more, to share their feelings, to speak about the family, the company and finally to feel the nature savor of the cup of tea.

Besides a normal thirst-quenching beverage, tea is also considered a delicate and meaningful one. In the past, it used to be the leverage for poets’ inspiration. Up to now, the habit of leisure tea-drinking has helped refresh and polish the drinkers’ minds. Moreover, a person's character can be assessed by his or her tea drinking ways. Vietnamese people consider those who drink concentrated tea to be finely-mannered; and those who can pour tea into bowls arranged in a circle using a coconut scoop without spilling a drop will certainly enjoy the admiration of their tea-drinking peers.

Kinds of tea

Viet Nam has grown many and various types of tea such as che Tuyet, che Moc cau, che man, che chi … Each one is combined with a particular kind of flower: che man with chrysanthemum; che bup with hoa soi flowers; high quality che man and che bup with lotus, narcissus or jasmine. Some connoisseurs go so far as to row out to the middle of a pond to place small amounts of tea inside lotus buds in order to perfume it. An example is cum tea, grown by the Tay ethnic minority. Cum tea plants are allowed to grow until the buds are mature, then they are picked, and roasted in a pan until they are dry and the buds begin to curl up. The tea is then wrapped up in palm leaves to keep it fragrant.

The Vietnamese like to mix tea with flowers to make it more aromatic. Tea with lotus is very precious for Vietnamese people. This kind of tea was formerly reserved to the Kings. According to the predecessors, when the lotus blossoms in the afternoon, they put a sachet of tea in the pistil and then, they tighten it with the sheets of lotus. In the next morning, they take dew remained on the sheets and in mixture with the sachet of tea in the pistil. After having poured into the cup, the soft and fresh odor of lotus dominates the whole room.

The tea culture has sticked to the life and the heart of Vietnamese people for generations. And when they drink tea at a small mouthful, the tea savor makes them more off-hand and closer to one another. This has formed the culture of the vicinity and the affection between neighbors.


 
 
 
Sai Gon has coffee on high floor, and under ground, etc., whereas Hanoi has street coffee and traditional cafeteria. The competition between Trung Nguyen coffee system, modern Cappuccino coffee and traditional coffee is still equal. This reveals that the Hanoians retain some uniqueness of their ancient lifestyle.

The Hanoians drink a lot of the dark, caffeinated beverage and prefer sipping their stronger blends outside in front of a small shop with some sweet milk and a spoonful of sugar. Every morning, on hot days of summer and cold and dull days of winter, you can easily see some here with a cup of coffee in one hand and a newspaper in the other.

 

For many Hanoians, the most important factor of a café is not its luxuriousness but the quality of the product. Old people love cafés which have been around a long time, located on old streets or inside deep alleys. Office workers like cafes with romantic and quiet styles like those in Pho Co Quarter. Young people prefer the noisy and busy atmosphere of modern and luxury or pavement cafés.

 

Street Coffee…

Soaking up the rhythms of the street and embracing Hanoi from all of its sides, from old to new ones, and from traditional to modern & quirky ones, you will tenderly recognize that, nothing can be better refresh us after hardworking hours than a cup of coffee on a street near Sword Lake (Hoan Kiem Lake).

Basking with sunshine in the afternoon when there’s less noise from automobiles, Hanoi ends a day and opens a new paradise for culture experiences. Taking over a legacy from bygone years with the involvement of an irresistible French factor, the Vietnamese have embraced café culture in a great way. There are so many famous coffee shops in Hanoi, like Nang café (6 Hang Bac), Nhan (39D1 Hang Hanh), Quat (Quan Thanh), Quynh (Bat Dan) to Giang (Hang Gai and Lam (60, 91 Nguyen Huu Huan)… Chairs are small, literally child-sized, and are sometimes made of blue plastic or painted wood. The tables are covered with glasses of ca phe den (black coffee) or ca phe sua da (iced coffee), which come with their own picturesque drip top. Not only just for connoisseurs,  these places are idea for having gossip, meeting old friends, talking to pass  time of day, stealing precious moments for romantics …

Now, let’s follow a coffee connoisseur…

A good example of the authentic Hanoi cafés is Hang Hanh, an atmospheric slender street veering off the city’s central Hoan Kiem Lake. In the afternoon, one may find himself inexplicably drawn to its’ wall-to-wall cafés which unfold below the shady boughs of leafy trees. Here, the annoying young and cool Vietnamese often sit and watch the world in front of their eyes. In late afternoon, with the last rays of sunshine, the place starts to buzz. At weekends, it is positively heaving with dating couples or gangs of youths desiring to be couples.

If this sounds too frenetic, a more subdued place like Giang Café can be chosen! Though situated in a busy tourist shopping street, the tiny confined Giang Café attracts the serious permanent coffee lovers and soccer addicts.

My next stop is Lam café - the perfect refuge for artists, poets and thespians to refresh their minds for creativeness. Situated on a shaded street, it will bring you the relaxed moments by the simple but artistically-decorated bamboo furniture, colorful framed oil paintings on the wall, ceiling fans as well as wooden table with a lot of tiny china teapots.

 

Yet, if you ask me about my favorite one, I will not hesitate to answer that it is Quynh Café. Down in a quiet side street, this unassuming cafes’ entrance is marked by a simple red lantern and ornate ironwork doors. Stepping inside, you not only see the bamboo furniture on tiled floor but also the tiny plants adorn wooden shuttered windows. Looking on damp-streaked walls, you may surprise with wooden arrows and trumpets, farming implements and ancient hunting pistols. Breathing the cool air from the antiquated table-fan, wallowing in soft French background music, you will desire to stay longer...

Coffee drinking from another approach

The resurgence of tourism to these fragrant shores has led to the resurrection of the wonderful old ambience of former colonial times in many Hanoi cafés. Delightful cafés are now housed in elegant French-style villas with exquisite silk prints, meticulously polished wooden floors and pot-planted courtyards or serve delicious food all day and evening. Street cafés like the La Terrasse du Metropole on Ngo Quyen and Le Phung Hieu or Highlands Café, 84 Nguyen Du are the typical examples!

Pho, a typical dish of Hanoi people, has been existing for a long time. Pho is prepered not only in a sophisticated manner but also in the technique which is required to have sweet but pure bouillon, soft but not crasded noodle, soft and sweet smelling meat. Only in cold days, having a hot and sweet smelling bowl of Pho to enjoy would make you experience the complete flavor of the special dish of Hanoi.

 

The bouillon.

Boil 10 cups water. Burn the whole fresh onions over high heat until golden brown. Add beef spareribs or ox tail into the boiling water. Skim while cooking to make a clear broth. Add browned onion and carrots after 1 hour of boiling. Cook another hour. Then remove meat and vegetable. Strain the bouillon, season it with spices, salt, fish sause as indicated and keep boiling to server very hot soup. Add boiled water, if necessary, to have 6-8 cups of bouillon. This broth is very spicy and a little salty.

Slice tender beef finely and cooked beef coarsely. Soak dry rice noodles in hot water 10 minutes before cooking. Coolk rice noodles sparately until done (about 10-15 minutes), drain in hot water to remove the starch.

Server at once into bowl.

Beef soup, rare: cooked rice noodles 1/3 bowl, raw beef minced on top. Pour over them one cup boiling bouillon. Add bib lettuce, green onion and onion rings.

Provide the guests with spoons and chopstichs to take the soup.


 
 
 
"Banh Chung" (Chung cake) is a traditional and irreplaceable cake of Vietnamese people in the Tet Holidays and King Hung’s anniversary (10th March Lunar). For the Vietnamese, making "Banh Chung" is the ideal way to express gratitude to their ancestors and homeland.

The legend of " Banh Chung"

 

Chung cake was invented by the 18th Prince of Hung Emperor in the contest of looking for new Emperor. According to the legend, 3,000-4,000 years ago, Prince Lang Lieu, made round and square cakes, the round Day cake symbolizing the sky and the square Chung cake symbolizing the Earth (under the ancient Vietnamese perception), to be offered on the occasion of Spring.

In the ancient conception, the Earth is square, hence Chung cake's shape is square, too, to reflect the Earth shape. Since the cakes he offered were of special meaning and delicious taste, Lang Lieu was selected to be the next Emperor. Since then, in honor of this 18th Prince, Vietnamese people always make and have Chung cake in the Lunar New Year. Up to now, Chung cake has become the most famous and irreplaceable traditional Vietnamese food in Tet Holiday. This legend aims to remind the next generations of the ancient tradition as well as the primary of Chung cake. Besides, it emphasizes the important role of rice and nature in water rice culture.

How to make a "Banh Chung"?

In contrast to the fast food in modern life, the process of making Chung cake is time-consuming and requires the contribution of several people. Main ingredients are glutinous rice, pork meat, and green beans wrapped in a square of bamboo leaves that will give the rice a green color after boiling. The

sticky rice must be very good and was soaked in water in the previous day. Rice cake is wrapped in square shape, and the wrapping power must be neither tight nor loose. Then the cake will be boiled in about 12 hours by wood. The Green Chung cake has nutrition with an original tasty flavor and may be kept for a long time. Eating Chung cake with vegetable pickles will bring you unforgettable taste!

 

In the traditional conception of Vietnamese people, the process of making Chung cake is the opportunity for family to come together. Sitting around the warm fire, all members in the family tell one another the past stories and are ready for a New Year with wishes of best things. Nowadays, in some big cities, the business lifestyle of modern society prevent people from preparing the cake, however, the habit of worship ancestors with Chung cake never changes. It is the evidence of the Vietnamese loyalty and deep gratitude to ancestors.

Cao Lau is the foremost traditional Hoi An food. Visitors to Hoi An always remember Cao Lau, which was considered by Quang Nam people as a special symbol for Hoi An.

 

Cao lau noodles are carefully made from local new sticky rice. Water used to soak rice must be taken from wells in the Ba Le Village; noodles thus will be soft, enduring and flavored with special sweet-smelling.

On the Cao Lau noodles were some meat slices mixed with fat made from fried noodles served with vegetables and bean sprouts. Sharp-witted eaters would find out the specific flavor of the dish.

Dry pancakes used as ingredient must be thick with much sesame on the surface. Greasy coconut quintessence and bitter green cabbage are also indispensable. The so-called genuine Cao lau Hoi An must satisfy all above requirements.

It was said that only some wells in Hoi An were used to make Cao Lau noodles. What is more, only some Hoi An families were able to produce Cao Lau by their own traditional way, but the quality was not as good as it was before. Cao Lau did not have Vietnamese flavor. Despite its Chinese-like appearance, no Chinese accepted it as Chinese food. Until now, the origin of Cao Lau still remains in mystery.

 


 
 
 

Grilled shrimp paste, which has been roughly translated in Vietnamese as chao tom, was originally created by the ingenious cooks for the imperial kitchen in Hue. Walking along some streets and stopping at one grilled shrimp paste vendor in Hue, Hanoi or Saigon will give you the chance for tasting that dish with unforgettable flavor!

 

 

Is it easy to make?

 

If you have chance to see how Vietnamese people make a good grilled shrimp paste, you will notice that its process is not so difficult or time-consuming.

Firstly, boil the pork fat, drain and finely dice then, put shrimp, garlic, scallion, egg white, sugar, salt and pepper in a food processor. Do not forget to add pork fat and mix well. Split each section of the sugar cane lengthwise into quarters then oil your fingers. Mold the paste onto the sugar cane; leave about 1 inch each end of the sugar cane exposed to serve as a handle. .. You can grill over medium charcoal, or broil in the oven until browned or pre-steam until the color turns pink then pan-fry them. Taste and adjust if necessary.

Indispensable spices

It must be a big mistake if you enjoy this dish without fish sauce which is considered the most finical one in Vietnam. Chicken broth, tamarind juice, peanut butter are combined in a small sauce pan, stir well and brought to boil over medium heat, adding sugar to taste.

Chả giò” (or Nem Rán in the North) is one of the most popular traditional Vietnamese food, literally meaning minced pork roll.

 

 

 

The most common English translation of “Chả giò” is spring roll, though this is just a fancy name since the food has nothing to do with spring.

 

 

Ingredients

The main ingredients of a roll of “chả giò” are commonly seasonal ground meat, mushrooms, and diced vegetables such as carrots and jicama, rolled up in a sheet of moist rice paper. The roll is then deeply fried until the rice paper coat turns crispy and golden brown. The ingredients, however, are not fixed. The most commonly used meat is pork, but one can also use crab, shrimp, sometimes snails (in northern Vietnam), and tofu (for vegan chả giò). If diced carrots and jicama are used, the stuffs inside the rolls are a little bit crunchy, and match well with the crispy fried rice paper. Nevertheless, the juice from these vegetables can soon cause the rolls to soften after only a short time. To keep the rolls crispy for a long time, mashed sweet potato or mung beans may be used instead. One may also include bean sprouts and rice vermicelli in the stuffing mix, yet, this is a rare practice. Eggs and various spices can be added based on each one's preference.

“Chả giò rế” is a rare kind of “chả giò” that uses “bánh hỏi” (thin rice vermicelli woven into a sheet) instead of rice paper. The stuffs inside the roll are the same as normal chả giò, and the roll is also deeply fried. Since the sheets of “bánh hỏi” themselves are not very wide, and the rice vermicelli is too easily shattered, “chả giò rế” rolls are often small and difficult to make. They are only seen at big parties and restaurants.

Side notes

At some restaurants, “chả giò” is incorrectly translated in English as "Egg rolls", and sometimes "Imperial rolls". Egg rolls are significantly different from “chả giò”, as the wrapper is a wheat flour sheet instead of moistened rice paper. However, many Vietnamese restaurants in America have adopted the wheat flour sheet to make their “chả giò”, since it makes the rolls harder to shatter when fried, and the rolls stay crispy for longer time.


 
 
 
Hanoi now has several stores selling Cha ca La Vong, but none of them can be equal to the Cha Ca Road’s in terms of quality and flavor. As a popular dish, La Vong grilled fish pie is indeed a remarkable culinary invention.

 The long history…

 

In ancient days, there was a street selling paints, called the Paints Street. The Doan family, located at house No, 14 of this street, hit upon a new idea that sold fried fish pie served with soft noodles and seasoning. Encouraged by the appreciation of customers, the family specialized in this trade and the shop was called as "Cha ca La Vong store" as a wooden statue of an old fisherman (La Vong) holding a fishing rod and a string of fish stands at the door. As the specialty grew famous with every passing day, the street was renamed by the people as Cha Ca Street (fried fish pie street).

 

Imagine that you are one of the guests…

While you sit down at the table, the waiter starts laying there some seasonings includes a bowl of well - stirred shrimp paste sauce mixed up with lemon. After dropping the liquor, he will decorate the bowl with a few slices of red fresh pimento, a plate of grilled ground nuts of gold yellow color, various species of mint vegetables o­nions in small white slices.

To many customers, the sight of such seasoning already greatly stimulates their appetite. A few minutes later, fried fish, yellow in color and flagrant in smell put o­n a plate of anethum vegetable, is brought in. But that is not all. A few seconds more, as soon as a cauldron of boiling fat is brought in, the waiter starts pouring it o­n each bowl of grilled fish, thus producing a white smoke and sputtering noise.

Now, this is the time for picking and choosing what you like from the dishes on the table; sticking them into your bowl. Everything in all dishes should be eaten together. Let’s taste


 
 
 
When having most Vietnamese food, “nuoc mam” or Fish Sauce is the indispensable spice of much deliciousness.

 

Whoever coming to Vietnam and most Southeast Asian countries (such as Thailand, Laos, Cambodia) is much fond of a special condiment - Fish sauce (or nuoc mam in Vietnamese). It is a staple ingredient of numerous food like curry and sauces, and is derived from fish that is allowed to ferment.

 

The origin of fish sauce in Vietnam dates back to ancient times as a primary source of protein. Early fishing boats were unable to venture into the deep ocean to catch larger fish for more fish meat. Instead, they mostly stayed close to the shore and net small fish. Later on, it was found that they could produce a richer protein sauce by layering these small fish in barrels with salt. Since then, there appeared such a delicious sauce!

Ingredients and production process: Only the fresh small fish makes good-quality fish sauce, which is found in clear color and good smell. In Vietnam, fish sauce is very popular and can be any of various mixtures based on the liquid of salted, fermented fish. First, small fish and salt are put in wooden boxes to ferment. Then, it is slowly pressed so as to yield the salty, fishy liquid.

This extremely pungent, strong-flavored and salty liquid can range in color. For the pure fish sauce, fresh anchovy fish sauce is selected and mixed with salt by applying the unique Vietnamese traditional process. Fermentation is started once a year, during the fishing season. After about 3 months in the barrel, the liquid drips from an open spigot, to be poured back into the top of the barrel. Six months under the sunlight will make the fish sauce of much better smell.

The unique characteristic of fish sauce is salty flavor and fishy smell. An interesting characteristic of fish sauce is that it loses its fishy odor once mixed with other ingredients. It is commonly used for cooking and dipping seafood and many other Vietnamese foods as well. In Vietnam, it is generally called nước mắm (well known by these brand names: nước mắm Phu Quoc or Phu Quoc fish sauce, and nước mắm Phan Thiet or Phan Thiet fish sauce).


 
 
 
Western culture considers that eating a dog is not good, but there will be no problem with other sorts of animals, as long as they are not called pets. However, for the vast majority of people on Earth, cultural values are very different. Some strange foods are considered a delicacy in some Asian cultures including China, Korea, Philippines, Vietnam, Laos, Cambodia, Thailand and Myanmar. Indeed, these food are very tasty and protein rich. May be you should try them some day if you are not vegetarian.

Dog meat is consumed in Vietnam to varying degrees of acceptability, though it predominantly exists in the North. It's a winter food which believed to keep you extraordinarily warm on cold nights.  Dog meat is eaten in a variety of ways, from grilled, stuffed in spring rolls, stir fried, to added to soups. There are multiple dishes featuring dog meat, and they often include the head, feet as well as internal organs. Dog meat restaurants can be found throughout the country. If you are in Hanoi and you are eager to try this dish, please come to a restaurant on Nhat Tan Street - Tay Ho District. Typically, a chef will choose one of seven ways to cook dog, collectively known as "cầy tơ 7 món". You can choose steamed dog meat, dog sausage, steamed dog in shrimp paste, ginger and rice vinegar, grilled dog meat, bamboo shoots and dog bone marrow or fried dog in lemon grass and chili. Here, you can see groups of customers who seated on mats spending their evenings on sharing plates of dog meat and drinking alcohol.

Dog meat is supposed to raise the libido and sometimes considered unsuitable for women. In other words, eating dog meat can serve as a male bonding exercise. Nevertheless, it is not uncommon for women to eat dog meat. The consumption of dog meat can be part of a ritual life which usually occurring in the end of the lunar month for reasons of astrology and luck. Restaurants which mainly exist to serve dog meat may only open for the last half of the lunar month.

 

Some kinds of snake dishes

Snakes are a common novelty and relished food. You can drink the wine as well as eat the flesh on several occasions. When I visit one of my Vietnamese friends, he caught a cobra outside his front door and shared it with me on evening. Actually, there is very little meat on a cobra, so the skin is eaten as well. In the village of Le Mat, which famous for its snake restaurants, I tried snake meat in a number of ways, including in soup (both the taste and texture was like crab meat) and spring rolls (tastes like chicken). Furthermore, snake blood is supposed to be healthy with many benefits as well as a natural form of Viagra. So what is its taste like? I was surprised that tasting a fried meat actually a bit like custard. There is no fat and extremely lean and tender. After trying snake, you will surely be back for more.

 

Lizards and frogs (best grilled) are standard fare in Phan Thiet. Some of my friend said that he had never tried frog until he came to Vietnam, but now he like it a lot. If you ever order a frog dish in Vietnam, pay attention to the bones! During rainy season, Vietnamese people catch toads and boil them up. They merely cut out the stomach organ and eat the rest-skin, guts and all.

I watched my friends eating trung vit lon for many months before trying it myself. These fertilized duck eggs are allowed to partially develop and then, they are hard-boiled. Crack the top off, suck out the juice and then spoon out the colorful morsels with pinches of pickled carrots, garlic, radish, turnip, some mint leaves, and a dash of salt and pepper.

Experience had taught me that in Vietnam, food nearly always tastes better than it looks. When traveling, you always want to experience the culinary delights that you never see at home. Eating different and unusual food is a big part of what makes your holiday memorable…


 
 
 
Bun (Rice vermicelli) is made of rice flour which is turned into small, circular and white threads wrapped up into small coils called Con Bun. Vietnamese rice vermicelli is a preferable as well as a popular dish!

 

 

The best rice noodles have only two ingredients: rice or rice flour, and water. Rice vermicelli are thin, translucent noodles that are similar to cellophane noodles, with which they are often confused (rice vermicelli are made from rice; cellophane noodles are made from bean starch). There are different varieties of vermicelli depending on their shape: bun roi (stirred vermicelli), bun mam (twisted vermicelli), bun la (vermicelli paper), and bun dem tram (shreded vermicelli).

 

Rice vermicelli noodles are delicious and easy to prepare. Let’s see how rice vermicelli dishes are prepared step by step!

Before cooking, simply soak rice vermicelli in warm (not hot) water for just two minutes. Then, in order to have a delicious bowl of rice, you should add different kinds of ingredients and vegetables. You can choose one of various ingredients that can be served with vermicelli such as: grilled pork meat, fried rice cakes, snails, fried eggs, lean meat pie, chicken, and crab soup, etc.

 

Bun cha

Do not be so surprised if you see that each region and locality, even each restaurant, has its own vermicelli dishes with their own recipes. There are a variety of ways to enjoy rice vermicelli, each dish having its own unique taste, for example: “Bun Cha (vermicelli and grilled chopped meat), “Bun Rieu (vermicelli and sour crab soup), Bun Bo (vermicelli and beef ), “Bun Oc” (vermicelli and snails) and so on.

 

Let’s try the very delicious taste of Bun Cha and Bun Oc! Bun Cha (Vermicelli and grilled chopped meat) includes rice vermicelli, grilled pork and spicy, raw vegetables and well mixed fish sauce. two kinds of Cha (grilled pork) used, depending upon the cut of the meat. If the pork is cut into small pieces, it is called Cha Mieng (piece of grilled pork). If it is minced prior to being shaped into small cubes, it is named Cha Bam (minced grilled pork). Bun Oc (Rice vermicelli with fresh water snail) has fresh water snails as main ingredient. These snails will have been kept in clean fresh water for about ten hours before being boiled for the dish, to allow sufficient time for the snails to release any organic matter they may have in their shells. The boiled snails after being taken out of their shells would be cleaned. The soup for the dish is made from the water in which snails have been boiled in. To the soup is added tomatoes and several kinds of flavour and vinegar.

"Cốm" (green sticky rice) is a delicacy that is made only in autumn and cherished by all Vietnamese. For Hanoians, nothing evokes autumn like the taste of young rice from Vong village, the grain so sweetly scented that they left a lasting impression...

 

 

Served with red persimmons or ripe bananas, "Cốm" is truly delicious. Vong village, on the outskirts of Hanoi, is said to produce the best "Cốm" in northern Vietnam. When autumn comes, Hanoians everywhere always remember the special taste of "Cốm" which is a special gift from the soil made by hard-working peasants, holding a simple and fresh fragrance.

 

Every autumn, when the cool north-westerly wind brings a cold dew, the sticky rice ears bend themselves into arches waiting for ripe grains because these rice grains are at their fullest and the rice-milk is already concentrated in the grains, and the local farmers will know it is time to make “Cốm” – a specialty made from young green sticky rice.

"Cốm" is often eaten by hand, directly from the lotus leaves, a pinch at a time. When eating “Cốm”, you must enjoy slowly and chew very deliberately in order to appreciate all the scents, tastes, and plasticity of the young rice which is sweet, nutty and buttery.

Visitors to Hanoi during the "Cốm" making season are invited to go to Vong Village where they will have a chance to listen to the special rhythmic pounding of wooden pestles against mortars filled with young rice and see women shifting and winnowing the pounded young rice.

In Vong village, making “Cốm” used to be a common trade. People from Vong village are said to have the most complicated process for making "Cốm". Firstly, glutinous paddy is planted. To produce their famous "Cốm", residents of Vong village grow a special variety of sticky rice. The sticky rice must be harvested at just the right moment. When the paddy begins to ripen and still contains milk it is reaped but only at early dawn. The rice is plucked off manually so that the grains are not broken. Next, the choice grains are carefully selected, sifted and washed. At night, the grains are dried in a large pan

over a soft fire and then pounded in stone mortars. Following this, the young rice is removed from the mortar and winnowed before being poured again into the mortar and the process repeated. This is then repeated exactly seven times so that all the husk is removed from the young sticky grains. There is an art to this part of the process. If the pounding is done irregularly and in haste, or it is not repeated seven times, the green colour of the grains will disappear and be replaced by an unexpected brown colour. Then the whole process will have been to no avail because customers will refuse to buy such produce. This should go some way to explaining exactly how difficult the whole process of "Cốm" making is.

 

“Not every one can dry and pound "Cốm". It is a closely guarded secret in some families that is never revealed to the mothers or daughters!” says 72-year-old Pham Thi Nguyet, whose family still produces “Cốm”. After the “Cốm” has been pounded, the crystal spring rice is wrapped tightly in emerald lotus leaves to keep it from drying and allowing it to absorb lotus flavour.

Better than any other person, peasants are the only ones who truly understand when the rice ears are ripe enough to be reaped to begin making “Cốm”. From then on, “Cốm” is still available, however, as it is used in different local specialties.

 

“Cốm” is an ingredient used in many specialities of Vietnam, including “Cốm xào” (browned green sticky rice), “Bánh cốm”  (green sticky rice cake) and “Chè cốm” (sweetened green sticky rice paste) and so on.

 

“Bánh cốm” is the well-known as it is found at every engagement ceremony. The cakes are wrapped with bananas leaves into squares, tied with a red string and stamped on the outside with a Chinese character meaning "double happiness". With these characteristics, “Bánh cốm” is believed to be a symbol of steadfast and eternal love.

Green sticky rice cakes are sold on Hang Than Street. Sticky cakes stuffed with green rice are sold on Hang Dieu Street and Quoc Huong green rice paste is sold on Hang Bong Street. Restaurants also offer dishes involving “Cốm”, such as chicken stewed with herbs and green rice, or green rice served with fried shrimp.

Nowadays, thanks to convenient means of transport, many Hanoians send Vong Village’s  "Cốm" to their relatives in other parts of the country, and even abroad, as a special gift. By this way, the delicious taste of "Cốm" always stays in the hearts of Hanoians wherever they live. To those who have ever been involved in farming, eating "Cốm" often reminds them of a fresh and fragrant paddy.

Hue beef noodle takes its origin from the Royal Hue City of Central Vietnam. The broth is from cooking beef bones for a long period of time as well as a variety of different spices including lemongrass.

 

How does it taste? Well, having a bowl of Hue beef noodle, you will easily recognize that it is completely different from Pho since the former’s beef broth is much more spicy.

How to make it? Learning how to make a clear broth from bone and meat is quite a difficult task. After being selected from the market, the fresh beef will be shredded, boiled and taken out of the water to obtain a delicious clear broth. A typical version of Hue beef noodle must include pork, roast beef, pig’s blood, Vietnamese salami, Hue’s style salami, shrimp sauce and chopped lettuce.

The interesting thing is that, the amount of salt put in the beef noodle recipe varies between seasons. For example, during summer, Hue beef noodle soup is served with soy bean, mint and different kinds of lettuce while in the winter, the recipe is saltier added with lemongrass and fish.

The best Hue beef noodle comes from the street vendors who work from dawn to early morning. This hot dish represents just a few of the treasures of Hue's traditional cuisine. Among Vietnam’s delicate specialties, "bánh cuốn” ranks top thanks to its softness, sweet fragance of cinnamon, dried onion and strong taste of minced meat and sources!

 

Among other members of the extended noodle family, bánh cuốn almost ranks first. It is a paper-thin steamed rice flour pancake, much like delicate sheets of fresh rice noodles. The pancakes are plucked off of the linen steamer base, and immediately rolled with minced pork and mushrooms, then piled on a plate, sprinkled with deep fried shallots, snipped with scissors into bite sized sections, and topped with fresh herbs such as cilantro or Vietnamese basil. A plate of bánh cuốn is a light dish traditionally eaten as breakfast in Hanoi but now can also be found as a late night snack.

 

To eat, dip a section of rolled noodle goodness into the accompanying warm fish sauce broth, brightened with a squeeze of fresh lime. You can also pick the leaves off the herbs and add them to the dipping sauce, grabbing a leaf or two as you dip, or you can follow each bite with a chaser of herbs. Bánh cuốn are often eaten with different sides of pork sausages, including sheets of an orange hued, roasted cinnamon sausage called chả quế.

A short walk north of Hàng Da Market and Hàng Điếu street will bring you to Bánh Cuốn Thanh Vân, just look for the bánh cuốn station—two large covered steaming pots—out front along the sidewalk. Just take a look! The practiced hands keep the bánh cuốn rolling out with experiences, alternating seamlessly between spreading the thin batter on the linen base of one steamer, then at right time, turning to the other to peel the delicately steamed pancake off the linen base with a bamboo stick. By the time the batter is spread on its newly emptied linen base, the pancake in the first steamer is ready and waiting. With only 6 tables nestled inside the small open storefront, the pace never slows. Serving 7AM-1PM and 5PM-11PM.

Then, place them to cook in the same water. Cook until tender. Mash them or chop in blender. After that, peel, core, and cut the pineapple into small pieces. Cover with water and cook until tender.
